Wet Ingredients

  • 2 large very ripe bananas, mashed (about 1 cup) The more brown spots, the sweeter they are.
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 3/4 cup brown sugar, packed
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 cup all-purpose flour Can use gluten-free flour blend as a substitute.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional) Can experiment with different kinds of chocolate chips.

Preparation

  • Preheat the oven to 350°F (175°C) and grease an 8x8 inch baking pan.
  • In a large bowl, mix the mashed bananas, melted butter, and brown sugar until well combined.
  • Add the vanilla extract and mix again.
  • In another bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the banana mixture and stir until just combined.
  • Fold in chocolate chips if using.
  • Pour the batter into the prepared pan and spread it evenly.

Baking

  • Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow to cool before cutting into squares and serving.

Notes

Best served warm or at room temperature. Cut into squares and enjoy on their own or with ice cream. Can be stored in an airtight container for up to 3 days at room temperature or 1 week in the refrigerator. For longer storage, wrap individual squares and freeze.
