Ingredients
  

For the Red Velvet Cake

  • 1.5 cups all-purpose flour
  • 1 tablespoon unsweetened cocoa powder
  • 0.5 teaspoon baking soda
  • 1 cup sugar
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon vinegar

For the Cheesecake Layer

  • 1 cup cream cheese
  • 0.5 cups powdered sugar
  • 1 cup heavy cream
  • 1 cup fresh strawberries, sliced

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a bowl, sift together the flour, cocoa powder, and baking soda.
  • In a separate bowl, mix sugar, oil, buttermilk, eggs, food coloring, vanilla, and vinegar. Combine the wet and dry ingredients until smooth.
  • Pour the batter evenly into the prepared pans.
  • Bake for 25-30 minutes, or until a toothpick inserted comes out clean. Cool completely.

Cheesecake Assembly

  • For the cheesecake layer, beat the cream cheese and powdered sugar until smooth.
  • In another bowl, whip the heavy cream and fold it into the cream cheese mixture.
  • Slice the cooled cakes in half horizontally.
  • Layer one red velvet layer, then spread with the cheesecake layer and strawberries. Repeat with the remaining layers.
  • Finish with a cheesecake topping and garnish with more strawberries.

Notes

Serve the cheesecake chilled. Allow the cakes to cool completely before assembling to prevent the cheesecake layer from melting. Use fresh strawberries for the best flavor and texture.
