Dry Ingredients

  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.25 teaspoon baking soda
  • 0.5 cups granulated sugar
  • 0.5 teaspoon salt

Wet Ingredients

  • 1 cup fresh blueberries Use fresh blueberries for best flavor; frozen can be used if thawed and drained.
  • 0.5 cups milk
  • 0.25 cups melted butter
  • 1 teaspoon vanilla extract
  • 1 large egg

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C) and grease a muffin tin or line it with liners.
  • In a bowl, mix together the flour, baking powder, baking soda, sugar, and salt.
  • In another bowl, combine the milk, melted butter, vanilla extract, and egg.
  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  • Gently fold in the blueberries.

Baking

  • Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  • Bake for about 15-20 minutes or until a toothpick comes out clean.
  • Allow to cool slightly before removing from the tin and serving.

Notes

Serve warm plain or with powdered sugar. Pairs well with yogurt or whipped cream. Store in an airtight container for up to 2 days at room temperature or refrigerate for up to a week.
