  • 1.5 pounds ground beef (80/20 recommended)
  • 8 slices bacon, chopped
  • 1 small onion, finely diced
  • 0.5 cup bourbon
  • 0.5 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • 4 pieces hamburger buns
  • 4 slices cheddar cheese

Cooking

  • In a skillet, cook the chopped bacon over medium heat until crispy. Remove and drain on paper towels.
  • In the same skillet, add the finely diced onion and cook until softened.
  • Add the ground beef to the skillet and cook until browned, seasoning with salt and pepper.
  • Stir in the bourbon, ketchup, brown sugar, and Worcestershire sauce. Cook the mixture until it thickens, about 10 minutes.
  • Preheat the broiler. If you like, toast the hamburger buns.
  • Spoon the sloppy joe filling onto the bottom half of each bun. Top each with crispy bacon and a slice of cheddar cheese.
  • Place under the broiler until the cheese melts, about 2-3 minutes. Serve with the tops of the buns.

Notes

Serve these melts hot, with fries, chips, or a fresh salad. Offer pickles or jalapeƱos on the side for an extra kick. For variations, consider plant-based ground beef and veggie bacon for a vegetarian option.
