Crust Ingredients

  • 1.5 cups chocolate graham cracker crumbs Use chocolate-flavored for best taste.
  • 0.25 cups sugar
  • 0.5 cups unsalted butter, melted Ensure it is fully melted.

Filling Ingredients

  • 16 oz cream cheese, softened Soften for a smooth texture.
  • 1 cup sugar
  • 1 teaspoon vanilla extract Use pure vanilla for better flavor.
  • 3 large eggs Add one at a time, mixing well.
  • 1 cup sour cream Full-fat for richness.
  • 1 cup cherry pie filling For topping.
  • Chocolate shavings for garnish Optional.

Instructions
 

Preparation

  • Preheat the oven to 325°F (163°C).
  • In a mixing bowl, combine chocolate graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a springform pan to form the crust.

Filling

  • In another bowl, beat the cream cheese until smooth. Gradually add sugar and vanilla extract while continuing to beat.
  • Add the eggs, one at a time, mixing well after each addition.
  • Stir in the sour cream until fully combined.
  • Pour half of the cream cheese mixture over the crust.
  • Spoon half of the cherry pie filling over the mixture, then add the remaining cream cheese mixture on top and finish with the remaining cherry filling.

Baking

  • Bake for 50-60 minutes, or until the center is set.

Cooling

  • Allow to cool before refrigerating for at least 4 hours.

Serving

  • Garnish with chocolate shavings before serving.
  • Serve chilled, sliced into wedges.

Notes

Store leftovers in the refrigerator covered with plastic wrap or in an airtight container. It will stay fresh for up to five days. For long-term storage, freeze wrapped well to prevent freezer burn. You can substitute cherry pie filling with raspberry or blueberry for variation.
