For the Chicken

  • 1.5 pounds boneless skinless chicken thighs

For the Marinade

  • 2.5 tablespoons olive oil
  • 0.5 teaspoon salt or salt to taste
  • 0.25 teaspoon ground black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon brown sugar
  • 0.5 teaspoon Italian seasoning

Preparation

  • Preheat your oven to 425°F (220°C) and line a sheet pan with aluminum foil.
  • In a large bowl, combine the olive oil, salt, black pepper, onion powder, garlic powder, smoked paprika, brown sugar, and Italian seasoning until well blended.
  • Add the chicken thighs to the bowl and toss until they are evenly coated.
  • Place the chicken thighs on the lined sheet pan with the smooth side facing up.

Cooking

  • Bake the chicken uncovered for 20-30 minutes or until the internal temperature reaches 165°F (74°C), flipping once for even cooking.

Serving

  • Serve the thighs hot, putting them on a plate with rice, salad, or roasted vegetables. Optionally, slice the thighs and add them to wraps, bowls, or pasta. Add lemon or extra sauce if desired.

Notes

Let the chicken cool to room temperature before storing. Store in an airtight container in the fridge for up to 3-4 days. Reheat in the oven at 350°F (175°C) until warm or use a microwave. Pat the thighs dry before seasoning for best flavor. For crispier skin, broil for 1-2 minutes at the end.
