  • 0.5 teaspoon salt (or salt to taste)
  • 0.25 teaspoon ground black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon brown sugar
  • 0.5 teaspoon Italian seasoning

Preparation

  • Preheat the oven to 425°F (220°C). Line a sheet pan with aluminum foil and set aside.
  • In a large bowl, combine the olive oil, salt, pepper, garlic powder, onion powder, smoked paprika, brown sugar, and Italian seasoning. Stir until well blended.
  • Add the chicken thighs to the bowl and toss them in the seasoning mixture until they are well coated.

Cooking

  • Place the chicken thighs on the sheet pan with the smooth side facing up and bake uncovered for 20 to 30 minutes, until the internal temperature reaches 165°F (74°C).
  • Flip the chicken thighs at least once during the cooking process to ensure even browning.

Notes

Pat the thighs dry before seasoning for better browning. Use a meat thermometer to check for safe doneness at 165°F. For a crisp top, broil for 1–2 minutes at the end, watching closely. Let the chicken rest for 5 minutes after baking to allow the juices to settle.
