  • 8 pieces chicken thighs, bone-in and skin-on
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper optional for heat
  • to taste Fresh herbs (parsley or thyme) for garnish optional

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, mix together the olive oil, garlic powder, onion powder, smoked paprika, dried thyme, salt, black pepper, and cayenne pepper (if using).
  • Add the chicken thighs to the bowl and coat them evenly with the spice mixture.
  • Place the chicken thighs on a baking sheet lined with parchment paper, skin-side up.

Cooking

  • Bake for 35-40 minutes, or until the skin is crispy and the chicken is cooked through.
  • Let the chicken rest for a few minutes before serving. Garnish with fresh herbs if desired.

Notes

Make sure to pat the chicken thighs dry with paper towels before seasoning for extra crispiness. Marinate the chicken in the seasoning for more flavor, and use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).
