Pasta and Vegetables

  • 2 cups your favorite pasta Use any type of pasta, including gluten-free options.
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, fresh
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional) Add for extra flavor.

Preparation

  • Boil water in a large pot. Once boiling, add the pasta and cook it according to the package instructions. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  • Toss in the halved cherry tomatoes and cook for about 3-4 minutes until they soften.
  • Add the fresh spinach and basil to the skillet. Cook until the spinach wilts, stirring occasionally.
  • Mix in the cooked pasta and season with salt and pepper. Stir well to combine.

Serving

  • Serve hot, topped with grated Parmesan cheese if desired.

Notes

This dish is best served warm. You can plate it directly from the skillet for a rustic look. Add a sprinkle of extra Parmesan cheese on top for a nice touch. Serve it with a side salad or garlic bread for a complete meal. To store leftovers, let the dish cool completely, then place it in an airtight container. It can be kept in the refrigerator for up to 3 days. For longer storage, you can freeze it for up to 2 months. Just be sure to reheat it thoroughly when ready to enjoy again.
