  • 1 lb ground chicken
  • 1 can white kidney beans, drained and rinsed
  • 1 can corn, drained
  • 8 oz cream cheese 1 block
  • 2 jalapenos, diced Adjust quantity for spiciness
  • 4 cups chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions
 

Preparation

  • In a large pot over medium heat, cook the ground chicken until it is browned.
  • Add the onion and garlic, and sauté until the onion becomes translucent.
  • Stir in the jalapenos, cumin, and chili powder, cooking for another minute.
  • Add the white kidney beans, corn, and chicken broth. Bring the mixture to a simmer.
  • Cut the cream cheese into cubes and add it to the pot. Stir until it melts and mixes well.
  • Reduce the heat and let it simmer for 20-30 minutes.
  • Season with salt and pepper to taste.

Serving

  • Serve hot, garnished with your choice of optional toppings.
