  • 1 lb chicken breast, diced Use leftover cooked chicken to save time.
  • 2 cups cooked rice You can use instant rice for a quicker option.
  • 1 cup chicken broth
  • 1 cup shredded cheese Top with your favorite type of cheese.
  • 1 cup mixed vegetables (frozen or fresh) Feel free to swap in your favorite vegetables.

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste Adjust according to your taste.

Cooking

  • Preheat the oven to 375°F (190°C).
  • In a large mixing bowl, combine diced chicken, cooked rice, chicken broth, mixed vegetables, garlic powder, onion powder, salt, and pepper.
  • Transfer the mixture to a greased baking dish.
  • Top with shredded cheese.
  • Cover the dish with aluminum foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 10-15 minutes or until the chicken is cooked through and the cheese is bubbly.

Notes

This dish works wonderfully as leftovers, making it an excellent option for lunch or dinner. For longer storage, freeze for up to 2-3 months and reheat thoroughly before serving.
