  • 1 pound ground chicken
  • 8 ounces pasta (any type)
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 ounces)
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • optional Parmesan cheese for serving

Preparation

  • Cook pasta according to package instructions; drain and set aside.
  • In a large skillet, heat olive oil over medium heat.
  • Add chopped onion and minced garlic; sauté until the onion is translucent.
  • Add ground chicken; cook until browned and no longer pink.
  • Stir in diced tomatoes, chicken broth, and Italian seasoning; simmer for 10 minutes.
  • Combine the cooked pasta with the chicken mixture; stir well and season with salt and pepper.
  • Serve hot, topped with Parmesan cheese if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave. Feel free to add vegetables like bell peppers, spinach, or zucchini for added nutrition.
