  • 4 medium potatoes, diced Use Yukon gold or red potatoes for best results
  • 4 cloves garlic, minced Fresh garlic is preferred for better flavor
  • 1/4 cup grated parmesan cheese Freshly grated cheese enhances flavor
  • 2 tablespoons olive oil Extra virgin olive oil is ideal
  • 1 teaspoon dried thyme Can be replaced with fresh thyme if available
  • 1 teaspoon salt Adjust to preference
  • 1/2 teaspoon black pepper Freshly ground pepper recommended
  • 1 tablespoon chopped parsley For garnish

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large mixing bowl, combine olive oil, garlic, thyme, salt, and pepper.
  • Add chicken thighs and potatoes, tossing to coat evenly.
  • Place the chicken thighs and potatoes in a single layer in a baking dish.
  • Sprinkle parmesan cheese over the top.

Cooking

  • Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are tender.

Serving

  • Garnish with chopped parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the microwave or oven at 350°F until warmed through.
