  • 1 lb ground chicken You can use cooked or rotisserie chicken for a quicker meal.
  • 1 large bell pepper, diced
  • 1 large onion, diced
  • 2 cups cooked rice
  • 1 cup shredded cheese Feel free to use different types of cheese like pepper jack or cheddar.
  • 4 large flour tortillas
  • to taste Salt and pepper
  • as needed tbsp Cooking oil for toasting Don’t overcrowd the skillet when toasting; give each burrito enough space.

Preparation

  • In a skillet, cook the ground chicken over medium heat until browned.
  • Add the diced bell pepper and onion, cooking until softened.
  • Season with salt and pepper.
  • In a bowl, combine the cooked rice, cooked chicken mixture, and shredded cheese.
  • Place a portion of the mixture onto each tortilla, roll them up tightly, and place seam-side down.

Cooking

  • Heat a little oil in the skillet, and toast the burritos until crispy and golden brown on each side.
  • Serve warm.

Notes

You can prepare these burritos a day ahead and store them in the fridge. If you have leftovers, let them cool down, wrap them tightly in foil or plastic wrap, and keep them in the fridge for up to 3 days. For longer storage, freeze them in an airtight container or freezer bag for up to 3 months. To reheat, simply microwave or bake until warm. These burritos pair well with toppings like sour cream, salsa, guacamole, or sides like chips.
