  • 2 cups Shredded rotisserie chicken Makes preparation easier

  • 1 cup Diced tomatoes For topping
  • 1 medium Avocado Sliced for topping
  • 1 cup Cheese (optional) Shredded cheese can be added
  • 1/2 cup Sour cream (optional) For serving
  • 2 tablespoons Lime For squeezing on top

Preparation

  • Preheat the oven to 375°F (190°C).
  • Place corn tortillas on a baking sheet and bake until crisp.
  • While the tortillas are baking, shred the rotisserie chicken.

Assembly

  • Assemble the tostadas by placing the shredded chicken on the crispy tortillas.
  • Top with shredded lettuce, diced tomatoes, sliced avocado, and cheese if desired.
  • Add a dollop of sour cream and a squeeze of lime.
  • Serve immediately and enjoy!

Notes

If you have leftovers, store the components separately. Keep the crispy tortillas in an airtight container at room temperature, and place shredded chicken and vegetables in separate containers in the fridge. For a fresh meal, reassemble the tostadas with leftover ingredients. Experiment with toppings like hot sauce or salsa, and try different proteins or veggies for variety.
