  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup heavy cream Can substitute with half-and-half or Greek yogurt.
  • 1 cup grated Parmesan cheese Add more for extra cheesiness.

  • Cook pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  • Add the shredded rotisserie chicken and diced tomatoes to the skillet. Stir well and cook for 2-3 minutes.
  • Pour in the heavy cream and bring to a simmer. Add the Parmesan cheese and stir until melted and smooth. Season with salt and pepper to taste.
  • Combine the cooked pasta with the sauce and chicken mixture, mixing well to coat the pasta.

Notes

Serve hot, garnished with fresh basil. Pair with a simple green salad and crusty bread. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Add a splash of milk or cream when reheating to restore creaminess.
