  • 2 cups cooked rotisserie chicken, shredded
  • 2 cups cooked rice
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables Can be substituted with favorite vegetables like peas, corn, or broccoli.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1 cup shredded cheese (optional) Use your preferred type of cheese.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cooked rotisserie chicken, cooked rice, cream of chicken soup, chicken broth, frozen mixed vegetables, garlic powder, onion powder, salt, and pepper. Mix well.
  • Pour the mixture into a greased 9×13 inch baking dish. If desired, sprinkle shredded cheese on top.

Cooking

  • Bake in the preheated oven for 25-30 minutes, or until heated through and cheese is bubbly.

Serving

  • Serve warm in bowls or plates. It pairs well with a side salad or crusty bread. Optional toppings include fresh herbs or crunchy fried onions.

Notes

For a healthier version, use brown rice and add more veggies like spinach or bell peppers. You can also use low-fat or reduced-sodium soup and broth.
