  • 1 whole rotisserie chicken, shredded
  • 2 cups stuffing mix
  • 1 can cream of chicken soup (10.5 oz)
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheese (optional)

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix together the shredded chicken, stuffing mix, cream of chicken soup, chicken broth, frozen vegetables, onion powder, garlic powder, and black pepper. Stir everything until well combined.
  • Pour the mixture into a greased 9x13-inch baking dish. Spread it out evenly.
  • If you like, sprinkle the shredded cheese on top for added flavor.
  • Bake in the preheated oven for about 30-35 minutes or until heated through and the top is golden brown.
  • Once done, remove from the oven and let it cool slightly before serving.

Notes

This casserole can be served hot with a simple green salad or steamed veggies on the side. To store leftovers, let it cool completely and cover it tightly with plastic wrap or aluminum foil in the refrigerator for about 3-4 days. It can also be frozen for up to 2 months, thaw in the fridge before reheating.
