  • 4 cloves garlic, minced
  • 1/2 teaspoon dried Italian herbs

  • 1/4 teaspoon black pepper
  • 1 large egg
  • 1/2 cup breadcrumbs

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the ground chicken, grated Parmesan, minced garlic, Italian herbs, salt, black pepper, egg, and breadcrumbs.
  • Mix until well combined.
  • Divide the mixture into mini meatloaf shapes and place them on a baking sheet lined with parchment paper.

Cooking

  • Bake in the preheated oven for 25-30 minutes or until cooked through.

Notes

Serve warm with mashed potatoes and vegetables. Refrigerate leftovers in an airtight container for up to three days, or freeze for up to three months. Ensure the chicken is at room temperature before mixing. You can substitute ground chicken with turkey and add diced vegetables for extra moisture.
