Ingredients
  

Main Ingredients

  • 4 pieces chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 pieces onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • 1 cup mixed vegetables (peas, carrots, etc.)
  • 1 tablespoon olive oil
  • to garnish Fresh parsley for garnish

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large baking dish, combine the chicken, rice, chicken broth, onion, garlic, paprika, salt, and pepper.
  • Stir in the mixed vegetables.
  • Drizzle olive oil over the top of the mixture.
  • Cover the dish with foil and bake for 40 minutes.
  • Remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and the rice is tender.
  • Garnish with fresh parsley and serve.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze for up to 3 months. Thaw in the fridge before reheating.
