Ingredients
  

For the crust

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/3 cup unsalted butter, melted

For the cheesecake filling

  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream
  • 1 whole Zest of 1 lime
  • 1/4 cup lime juice
  • 1 cup fresh blackberries

Instructions
 

Preparation

  • Preheat the oven to 325°F (163°C) and line a cupcake pan with liners.
  • In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom of each cupcake liner.

Making the Filling

  • In a separate bowl, beat the cream cheese and sugar until smooth. Add the vanilla, eggs, sour cream, lime zest, and lime juice, mixing until well combined.
  • Gently fold in the blackberries. Pour the cheesecake batter over the crust in each cupcake liner.

Baking

  • Bake for 20-25 minutes or until set. Let cool before chilling in the refrigerator for at least 2 hours.

Notes

These cupcakes are best served chilled. You can garnish them with additional fresh blackberries or a sprinkle of lime zest for added flair. Store leftovers in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.
