Ingredients
  

For the Crust

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake

  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream

For the Cherry Topping

  • 2 cups fresh cherries, pitted and halved
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

For the Chocolate Ganache

  • 1 cup heavy cream
  • 8 oz dark chocolate, chopped

  • Fresh cherries for garnish
  • Chocolate shavings for garnish

Instructions
 

Preparation of Crust

  • Preheat the oven to 325°F (163°C).
  • In a medium bowl, mix the chocolate cookie crumbs, sugar, and melted butter together until well combined.
  • Press this mixture evenly into the bottom of a greased 9-inch springform pan.
  • Bake for 10 minutes and then let it cool.

Making the Cheesecake Layer

  • In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy.
  • Add the eggs one at a time, beating well after each addition.
  • Mix in the vanilla extract and sour cream until everything is fully combined.
  • Pour the cheesecake mixture over the cooled crust.

Preparation of Cherry Topping

  • In a small saucepan, combine the pitted cherries, sugar, cornstarch, and lemon juice.
  • Cook this mixture over medium heat while stirring constantly until it thickens and the cherries start to break down, about 5-7 minutes.
  • Pour this cherry mixture over the cheesecake layer.

Baking the Cheesecake

  • Bake the cheesecake for 55-65 minutes or until the center is set and the edges are lightly browned.
  • Allow it to cool to room temperature, then refrigerate for at least 4 hours, preferably overnight.

Making the Chocolate Ganache

  • In a small saucepan, heat the heavy cream until it starts to simmer.
  • Remove it from heat and add the chopped dark chocolate.
  • Stir until the chocolate melts completely, creating a smooth ganache.
  • Let it cool slightly before pouring over the chilled cheesecake.

Garnishing

  • Garnish the cheesecake with fresh cherries and chocolate shavings.
  • Slice and serve.

Notes

Make sure to store leftover cheesecake in the refrigerator covered to prevent it from absorbing other odors. Best consumed within 3-4 days.
