White Chocolate Blueberry Cheesecake

Ingredients
  

Crust

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted

Filling

  • 2 cups cream cheese, softened Make sure at room temperature for a smoother texture.
  • 1 cup white chocolate, melted Melt using a microwave or double boiler, but be careful not to burn.
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs Add one at a time, mixing well after each.
  • 1 cup fresh blueberries Gently fold in to avoid crushing.

Topping

  • Whipped cream For serving.
  • Extra blueberries For topping on the served slices.

Instructions
 

Preparation

  • Preheat the oven to 325°F (160°C).
  • In a bowl, mix graham cracker crumbs and melted butter; press into the bottom of a springform pan.

Filling

  • In a large bowl, beat cream cheese, melted white chocolate, sugar, and vanilla until smooth.
  • Add eggs one at a time, mixing well after each.
  • Fold in blueberries and pour mixture over crust.

Baking

  • Bake for 50-60 minutes or until set.
  • Let cool, then refrigerate for at least 4 hours.

Serving

  • Slice into wedges and serve topped with whipped cream and extra blueberries.

Notes

Store tightly wrapped in the refrigerator for about 5-7 days. For longer storage, freeze for up to 3 months.
