Preparation

  • Melt the white chocolate in a heatproof bowl over a pot of simmering water, stirring until smooth. Let it cool slightly.
  • In a separate bowl, whip the heavy cream until stiff peaks form.
  • In another bowl, beat the egg whites and sugar until soft peaks form.
  • Gently fold the melted white chocolate and vanilla into the whipped cream.
  • Then gently fold the egg whites into the mixture until fully combined.
  • In parfait glasses, layer the mousse mixture with fresh raspberries.
  • Repeat the layers until the glasses are filled.
  • Chill in the refrigerator for at least 2 hours before serving.

Notes

Make sure to let the melted chocolate cool slightly before mixing it into the whipped cream to prevent it from melting the cream. Use fresh, ripe raspberries for the best flavor and color. If you want a sweeter mousse, you can add more sugar to the egg whites before beating them. You can also try using different berries, such as strawberries, blueberries, or blackberries, instead of raspberries for a different flavor.
