  • 1 head cauliflower, cut into florets
  • 2 cups cooked chicken breast, shredded Rotisserie chicken can be used for quicker prep
  • 1 cup buffalo sauce Adjust to taste
  • 1 cup shredded cheese Cheddar or mozzarella work well
  • 1/2 cup ranch dressing (optional)
  • to taste salt and pepper
  • as needed Green onions or parsley for garnish

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large pot, bring water to a boil and add the cauliflower florets. Cook for about 5 minutes until tender. Drain and set aside.
  • In a large mixing bowl, combine the cooked chicken, buffalo sauce, and ranch dressing (if using). Mix well.
  • Fold in the cooked cauliflower and season with salt and pepper to taste.

Baking

  • Transfer the mixture to a baking dish and top with shredded cheese.
  • Bake for 20-25 minutes, or until the cheese is bubbly and golden.
  • Garnish with green onions or parsley before serving.

Notes

For extra creaminess, add cream cheese to the mix. You can also top the dish with breadcrumbs for a crunchy topping.
