  • 7 tbsp butter, softened Make sure butter is at room temperature for easier mixing.
  • 1 cup all-purpose flour Can substitute with gluten-free flour blend if necessary.
  • 1 tbsp cocoa powder
  • 1 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1-2 tbsp red food coloring Adjust for vibrancy.
  • Powdered sugar for dusting

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream the butter and sugar together until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In another bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  • Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  • Add the red food coloring to achieve your desired color, and mix well.
  • Scoop tablespoon-sized portions of the dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.

Baking

  • Bake for 10-12 minutes, or until the edges are set.
  • Remove from the oven and let cool slightly, then dust with powdered sugar before serving.

Notes

These cookies are best served warm, but also taste great at room temperature. You can enjoy them plain or with milk/coffee. Store in an airtight container at room temperature for up to a week or freeze for three months. To add crunch, incorporate nuts or chocolate chips.
