  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened Make sure the butter is at room temperature.
  • 1/2 cup semi-sweet chocolate chips Can substitute with white chocolate for variation.
  • 1/2 cup sugar Using brown sugar will result in chewier cookies.
  • 1 none egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Filling and Topping

  • 1 box vanilla pudding Can use store-bought for convenience.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, cream together the softened butter and sugar until light and fluffy.
  • Beat in the egg and vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix the dry ingredients into the wet mixture until combined.

Baking

  • Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  • Bake for about 10-12 minutes or until the edges are lightly golden.
  • Once cooled, make a small indentation in the center of each cookie and fill it with vanilla pudding.
  • Melt chocolate chips and drizzle over the filled cookies. Let it set before serving.

Notes

These cookie bites can be enjoyed fresh or at room temperature. They store well in an airtight container in the refrigerator for 3-5 days.
