Filling Ingredients

  • 2 cups whole milk ricotta cheese Use whole milk for creamier texture.
  • 1/2 cup mini chocolate chips
  • 1/4 cup chopped pistachios Optional garnish.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

Crust Ingredients

  • 1 cup crushed graham crackers
  • 1/2 cup unsalted butter (melted)

Preparation

  • In a large mixing bowl, combine the ricotta cheese, powdered sugar, vanilla extract, and ground cinnamon. Mix until smooth.
  • Stir in the mini chocolate chips and set the mixture aside.
  • In another bowl, combine the crushed graham crackers with the melted butter and mix until well-combined.
  • Press the graham cracker mixture into the bottom of a greased baking dish to form a crust.
  • Spread the ricotta mixture evenly over the crust.
  • Garnish with chopped pistachios if you are using them.
  • Refrigerate for at least 4 hours or overnight.
  • Cut into squares and serve chilled.

Notes

Store any leftover squares in an airtight container in the refrigerator for up to 3 days. For best flavor and texture, prepare a day in advance and let them chill overnight. You can also wrap squares to freeze for up to a month, thawing them in the fridge before serving.
