Ingredients
  

For the Chicken

  • 4 pieces chicken thighs Bone-in skin-on recommended for best flavor
  • 2 tablespoons chipotle honey
  • 1 teaspoon salt
  • 1 teaspoon black pepper

For the Mashed Potatoes

  • 2 pounds potatoes, peeled and cubed Russet or Yukon Gold recommended
  • 1/2 cup milk Warm slightly before adding
  • 4 ounces smoked gouda cheese, shredded
  • 2 tablespoons butter

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Season the chicken thighs with salt, pepper, and chipotle honey. Place them in a baking dish.

Cooking

  • Bake the chicken for 30–35 minutes or until fully cooked.
  • Meanwhile, boil the potatoes in salted water until tender, about 15–20 minutes.
  • Drain the potatoes and return them to the pot.

Mashing and Serving

  • Add milk, butter, and smoked gouda to the potatoes; mash until creamy and smooth.
  • Serve the chicken thighs with a generous helping of smoked gouda mashed potatoes.

Notes

Pat chicken dry before seasoning for better glaze adhesion. Reheat leftovers at 350°F (175°C) until warm.
