  • 1 cup Mexican blend cheese Shredded
  • 1 cup corn Canned or frozen
  • 1 cup black beans Canned and rinsed
  • 2 tablespoons olive oil
  • 2 teaspoons seasoning e.g., taco seasoning, cumin, paprika
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Preparation

  • Preheat the oven to 375°F (190°C).
  • Heat olive oil in a skillet over medium heat.
  • Season chicken with salt, pepper, and other seasonings.
  • Sear chicken on both sides until golden brown.
  • Place chicken in a baking dish and top with corn, beans, and cheese.
  • Bake for 25-30 minutes until the chicken is cooked through and the cheese is melted.

Notes

Serve hot with rice, tortillas, or a green salad. Add a squeeze of lime or a spoon of salsa for more flavor. For storage, cool to room temperature, then store in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
