Ingredients
  

Pasta and Chicken

  • 8 oz pasta (your choice)
  • 2 pieces chicken breasts, diced Cut into small, even pieces for even cooking.
  • 2 cups cherry tomatoes, halved Do not overcook; should soften but keep shape.
  • 1/2 cup fresh basil, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil For cooking the chicken.
  • to taste Salt and pepper
  • Grated Parmesan cheese (optional) Can be added to taste.

Preparation

  • Cook the pasta according to package instructions and set aside.
  • In a large pan, heat olive oil over medium heat.
  • Add diced chicken and cook until golden brown.
  • Stir in garlic and cook for another minute.
  • Add cherry tomatoes and cook until they begin to soften.
  • Combine the cooked pasta with the chicken and tomato mixture.
  • Stir in fresh basil and season with salt and pepper.
  • Serve with grated Parmesan cheese if desired.

Notes

For a creamier dish, add a splash of pasta water or a small spoon of cream. Store any leftovers in an airtight container in the fridge for up to 3 days.
