Filling Ingredients

  • 1 lb Ground meat (beef or turkey)
  • 8 slices Monterey Jack cheese Can substitute with provolone or cheddar.
  • 2 medium Bell peppers Any color; feel free to mix.
  • 1 medium Onion Sliced.
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Salt Adjust according to taste.
  • 1/2 tsp Pepper Adjust according to taste.
  • 2 tbsp Olive oil For sautéing.

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a skillet over medium heat, sauté sliced onions and bell peppers in olive oil until softened.
  • Add the ground meat and cook until browned. Season with garlic powder, onion powder, salt, and pepper.
  • Remove from heat and let cool slightly.
  • Lay slices of Monterey Jack cheese on a piece of parchment paper.
  • Spoon the meat and vegetable mixture onto the cheese and roll it up.
  • Place the roll-ups on a baking sheet and bake for 10-15 minutes or until the cheese is melted and bubbly.
  • Serve warm.

Notes

These roll-ups can be served with a light salad or keto-friendly dipping sauce. They can also be cut into bite-sized pieces for appetizers at parties. Store leftovers in an airtight container in the refrigerator for 3-4 days.
