  • 2 cups cooked chicken, shredded Make sure the chicken is fully cooked and shredded.
  • 1 cup salsa verde
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup cooked brown rice or quinoa
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Preparation

  • Preheat oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded chicken, salsa verde, black beans, corn, cooked rice, cumin, salt, and pepper. Mix well.

Cooking

  • Transfer the mixture to a greased casserole dish and spread evenly.
  • Top with shredded cheese.
  • Bake in the preheated oven for 25-30 minutes, until the cheese is bubbly and golden.
  • Garnish with fresh cilantro before serving.

Notes

Serve hot from the oven paired with a green salad or tortilla chips. You can also add avocado or sour cream for extra flavor. Let leftovers cool completely before storing in an airtight container for up to 3 days in the refrigerator, or freeze for longer storage.
