Ingredients
  

Noodles and Sauce

  • 8 oz wide Lo Mein noodles, cooked and rinsed Rinse well to prevent sticking
  • 1 tablespoon peanut oil
  • 1 pound ground pork Can be swapped for chicken or tofu
  • 1/4 cup sliced green onions Divided, with extra for garnish
  • 1/2 cup low-sodium chicken broth
  • 3 tablespoons mirin
  • 2 tablespoons dark soy sauce
  • 1 tablespoon minced garlic
  • 2 teaspoons grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha
  • 4 cups coleslaw mix Can substitute with frozen mixed veggies

Instructions
 

Preparation

  • Cook the noodles according to package instructions, then set aside.
  • In a skillet, brown the ground pork with 1/4 cup of green onions in peanut oil.
  • In a bowl, whisk together the chicken broth, mirin, soy sauce, garlic, ginger, sesame oil, and sriracha.

Cooking

  • Add the cooked noodles, coleslaw mix, and the sauce to the skillet with the pork.
  • Toss everything together for 2-3 minutes until the noodles and veggies are well coated.
  • Garnish with the remaining green onions before serving.

Notes

Serve hot, optionally add extra green onions or a sprinkle of sesame seeds. Pair with soy sauce for dipping. Store leftovers in an airtight container and refrigerate for up to three days. Reheat on microwave or stovetop.
