Ingredients
  

For the Chicken Marinade

  • 3 tablespoons Honey for marinade
  • 2 tablespoons Lime Juice freshly squeezed
  • 1 tablespoon Lime Zest
  • 2 cloves Garlic minced
  • 1 teaspoon Ground Cumin
  • to taste Salt
  • to taste Pepper
  • 4 pieces Chicken Breasts boneless, skinless

For the Rice

  • 1 cup Jasmine Rice or basmati
  • 2 cups Chicken Broth

For the Topping

  • 2 pieces Avocado diced
  • 1 small Red Onion finely chopped
  • 1/4 cup Fresh Cilantro chopped
  • 1 tablespoon Olive Oil
  • 4 pieces Lime Wedges for garnish

Instructions
 

Preparation

  • In a bowl, mix honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper to create the marinade.
  • Add the chicken breasts to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes.

Cook the Rice

  • In a pot, combine jasmine rice and chicken broth. Bring it to a boil, then reduce heat to low and cover.
  • Cook for about 15-20 minutes until rice is fluffy and tender.

Cook the Chicken

  • Heat olive oil in a skillet over medium heat.
  • Remove the chicken from the marinade and cook for 6-7 minutes on each side or until fully cooked and golden brown.

Prepare the Avocado and Onion

  • In a bowl, mix the diced avocados, chopped red onion, and cilantro together. This will be the fresh topping.

Assembly

  • Once everything is cooked, fluff the rice with a fork.
  • In a serving dish, layer the rice, add the chicken on top, finish with the avocado mixture and garnish with lime wedges.

Notes

For extra flavor, let the chicken marinate longer if possible. Adjust honey and lime juice according to taste. You can add chili flakes to the avocado mixture for a spicy kick. Store leftovers in an airtight container in the refrigerator for up to 3 days.
