Ingredients
  

Salmon Bites

  • 1 lb fresh salmon (skinless and cut into bite-sized cubes) Ensure the salmon is fresh for the best taste.
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs Use gluten-free breadcrumbs for a gluten-free option.
  • 1 tbsp olive oil or spray for crisping

Bang Bang Sauce

  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha Adjust to spice level.
  • 1 tsp honey (optional)
  • Juice of ½ lime lime

Serving Ingredients

  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 pc avocado (sliced)
  • ½ cup shredded carrots
  • 2 pcs green onions (sliced)
  • 1 tbsp fresh cilantro for garnish
  • 1 tbsp sesame seeds for garnish

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) or your air fryer to 375°F (190°C).
  • In a bowl, mix the salmon cubes with garlic powder, smoked paprika, salt, and black pepper until well coated.
  • Add the panko breadcrumbs to a plate. Roll the seasoned salmon cubes in the breadcrumbs until they are fully covered.

Cooking

  • Place the salmon bites on a baking sheet or in the air fryer basket. If using the oven, spray with olive oil to help with crispiness.
  • Bake for about 12-15 minutes or air-fry for around 8-10 minutes, until golden and cooked through.

Making the Sauce

  • In a small bowl, mix mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice. Stir until smooth.

Assembly

  • Start with a base of jasmine rice or cauliflower rice in a bowl.
  • Top with shredded purple cabbage, salmon bites, avocado slices, shredded carrots, and green onions.
  • Drizzle Bang Bang sauce over the top and garnish with cilantro and sesame seeds.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. To reheat, use an oven or air fryer to restore their crispiness. You can use other types of fish or shrimp instead of salmon for a different flavor.
