  • 2 pieces chicken breasts Lean protein source
  • 2 pieces sweet potatoes Peel and cube before roasting
  • 1 cup rice White or brown rice can be used
  • 2 tablespoons olive oil For roasting sweet potatoes

Spices and Seasoning

  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste salt
  • to taste pepper

Garnish

  • to taste fresh parsley For garnish

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Peel and cube the sweet potatoes, then toss them with olive oil, garlic powder, paprika, salt, and pepper.
  • Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.

Cooking

  • While the sweet potatoes are roasting, cook the rice according to package instructions.
  • Season the chicken breasts with salt, pepper, and any remaining spices.
  • Heat a skillet over medium heat and cook the chicken for about 6-7 minutes on each side or until fully cooked.

Assembly

  • Once everything is cooked, assemble the bowls by layering rice, roasted sweet potatoes, and sliced chicken.
  • Garnish with fresh parsley and serve.

Notes

For additional flavors, try using different spices like cumin or chili powder. This dish is great for lunch or dinner and can also be enjoyed cold as a salad.
