  • 2 pieces boneless, skinless chicken breasts
  • 1 cup cottage cheese Use low-fat for a lighter option.
  • 1 cup marinara sauce Ensure it's gluten-free if needed.
  • 1 cup shredded mozzarella cheese Use low-fat for a lighter option.
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • to taste Olive oil for cooking
  • for garnish Fresh basil Optional

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium heat. Season the chicken breasts with salt, pepper, oregano, and garlic powder.
  • Cook the chicken for about 5-7 minutes on each side or until fully cooked.
  • Remove the chicken from the skillet and place it in a baking dish.
  • Spread the cottage cheese evenly over the cooked chicken.
  • Pour the marinara sauce on top of the cottage cheese layer.
  • Sprinkle the mozzarella and Parmesan cheese over the sauce.

Baking

  • Bake in the oven for about 20 minutes, or until the cheese is bubbly and golden.
  • Remove from the oven and let it cool for a few minutes.
  • Garnish with fresh basil if desired.

Notes

This dish can be served warm with a side salad, steamed vegetables, pasta, or brown rice. Leftovers should be stored in an airtight container and will stay fresh for up to 3 days. Can be frozen for up to 3 months.
