  • 2 pounds boneless, skinless chicken breast
  • 1 tablespoon olive oil
  • 1 tablespoon light brown sugar
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon ground paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon butter (diced)

Preparation

  • Preheat your oven to 400°F and lightly grease a 9×13 inch casserole dish.
  • Place the chicken breasts between plastic wrap and pound them to an even thickness of about 0.5 – 0.75 inches.
  • Rub olive oil over the chicken breasts.
  • In a bowl, mix the brown sugar, garlic powder, onion powder, paprika, Italian seasoning, salt, and black pepper.
  • Coat the chicken evenly with this seasoning mix.

Cooking

  • Arrange the seasoned chicken in the casserole dish.
  • Top each piece with a slice of butter.
  • Bake the chicken for 18-20 minutes until the internal temperature reaches 165°F.
  • Then, broil for an additional 1-3 minutes to get a nice brown color on top.

Notes

Make sure the chicken breasts are pounded to an even thickness for even cooking. Don't skip the broiling step for a nice golden crust. Use a meat thermometer to check that the chicken is cooked through without drying it out.
