Chicken Fried Chicken

Ingredients
  

For the Chicken

  • 6-8 pieces thin sliced chicken breasts Use thinly sliced for even cooking.
  • 2 cups flour For dredging and gravy.
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1.5 cups buttermilk
  • 1 piece egg
  • 1 Tbs hot sauce Adjust based on spice preference.

For the Gravy

  • 1/4 cup reserved oil from frying
  • 1/3 cup flour For thickening the gravy.
  • 2 cups milk
  • to taste salt & pepper

Instructions
 

Preparation

  • Heat oil in a deep fryer or large pan to 325°F.
  • In a large bowl, whisk together the flour, baking powder, baking soda, salt, pepper, and garlic powder.
  • In another bowl, whisk together the buttermilk, egg, and hot sauce.
  • Dredge the chicken in the flour mixture, dip into the egg mixture, then back into the flour mixture again, pressing to ensure it sticks well.

Cooking

  • Place the chicken in the pan or deep fryer and fry for 3-5 minutes on each side until golden brown.
  • Remove and drain on a paper towel-lined plate. Repeat with all the chicken.

Making the Gravy

  • In a large pan, add 1/4 cup of oil from cooking and heat on medium-high.
  • Stir in the flour until absorbed and cook for about 1 minute.
  • Slowly add in the milk while whisking to blend. Heat until thickened, then stir in salt and pepper to taste.

Serving

  • Pour the gravy over the chicken before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in an oven or air fryer to maintain crispiness.
