Ingredients
  

Cheesecake Mixture

  • 16 oz cream cheese, softened Make sure it's softened to room temperature.
  • 1 cup heavy whipping cream or Cool Whip Whip until stiff peaks form.
  • 1 cup powdered sugar To taste.
  • 1 cup crushed strawberries Use fresh for best flavor; thaw frozen strawberries if needed.

Graham Cracker Crust

  • 1 cup graham cracker crumbs
  • 2 tbsp butter, melted

Instructions
 

Preparation

  • In a large bowl, beat the softened cream cheese until smooth.
  • Add in the powdered sugar and mix until well combined.
  • In another bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture.
  • Incorporate the crushed strawberries into the cream mixture.
  • In another bowl, combine graham cracker crumbs with melted butter to form a crust.

Assembly

  • Scoop the cheesecake mixture into small cups or molds, and top with the graham cracker crust.

Chill

  • Chill in the refrigerator for at least an hour before serving.

Notes

Serve chilled, garnished with additional crushed strawberries or whipped cream. Store leftovers in an airtight container in the refrigerator for up to 3 days. Can be prepared a day in advance. For variations, add different fruit flavors or use chocolate cookies for the crust.
