Ingredients
  

Cheesecake Filling

  • 16 oz cream cheese, softened Make sure it's softened for easy mixing.
  • 1 cup heavy whipping cream or Cool Whip
  • 1 cup powdered sugar
  • 1 cup crushed strawberries Fresh or frozen strawberries can be used.

Graham Cracker Crust

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar For the graham cracker crust.

Instructions
 

Preparation

  • In a mixing bowl, beat the softened cream cheese until smooth.
  • Add the powdered sugar and mix until well combined.
  • In another bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture.
  • Add the crushed strawberries and mix gently.
  • In a separate bowl, combine the graham cracker crumbs and sugar.

Assembly

  • Line a muffin tin with cupcake liners and sprinkle some graham cracker mixture at the bottom.
  • Spoon the cheesecake mixture over the graham cracker layer and top with more crumbs.

Freezing

  • Freeze for at least 2 hours until set.

Notes

Store any leftover cheesecake bites in an airtight container in the freezer for up to three months. Let them sit a few minutes before serving to soften slightly.
