  • 2 cups leftover mashed potatoes (cold or room temperature) Make sure they are not too watery.
  • 1 cup shredded cheddar cheese (sharp or medium) For best flavor.
  • 1/2 cup mozzarella cheese, shredded Adds a stretchy texture.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, combine the leftover mashed potatoes, cheddar cheese, and mozzarella. Mix well until fully combined.
  • Scoop portions of the mixture and form them into small puffs or balls.
  • Place the puffs on a baking sheet lined with parchment paper.

Baking

  • Bake for about 20-25 minutes or until they are golden brown and crispy.

Notes

Serve warm with ketchup, sour cream, or your favorite dipping sauce. Can also be included in a meal with salad or soup. To store, let cool completely, then refrigerate in an airtight container for up to 3 days. Reheat in the oven at 350°F (175°C) for about 10 minutes.
