Ingredients
  

Cookie Bites

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened Make sure the butter is softened for easy mixing.
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 cup vanilla pudding mix
  • 1/2 cup milk Use less milk for a thicker filling.
  • 1 cup semi-sweet chocolate chips Melt for drizzling over cookies.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In another bowl, mix together the flour and baking soda. Gradually add the dry ingredients to the wet ingredients until just combined.
  • Drop tablespoon-sized balls of dough onto the prepared baking sheet.

Baking

  • Bake for 10-12 minutes or until the edges are lightly golden.

Filling and Assembly

  • Once cooled, prepare the filling by whisking together the vanilla pudding mix and milk until smooth.
  • Cut a small hole in the center of each cookie to fill with pudding.
  • Melt the chocolate chips in a microwave or double boiler and drizzle over the filled cookies.
  • Let the chocolate set before serving.

Notes

These cookie bites are best served fresh but can also be enjoyed at room temperature. Store in an airtight container for up to 3 days at room temperature or refrigerate for about a week.
