For the Cake

  • 4 large large eggs Ensure at room temperature for better mixing.
  • 1/2 cup granulated sugar
  • 1/3 cup all-purpose flour Can substitute with gluten-free flour blend.
  • 1/3 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

For the Filling and Garnish

  • 1 cup heavy whipping cream Beaten to stiff peaks.
  • 1 tablespoon powdered sugar For sweetening the cream.
  • 1 cup cherry pie filling Can substitute with fresh cherries.
  • Grated chocolate For garnish.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and line a 15 x 10 inch jelly roll pan with parchment paper.
  • In a bowl, whisk eggs and granulated sugar until thick and pale.
  • Sift together flour, cocoa powder, and salt, then fold into the egg mixture with vanilla.
  • Pour the batter into the prepared pan, spreading it evenly.
  • Bake for 12-15 minutes until the cake springs back when touched.
  • Immediately roll the cake in a towel, starting from the short end, and allow to cool completely.

Filling and Assembly

  • Meanwhile, beat the heavy cream with powdered sugar until stiff peaks form.
  • Unroll the cooled cake, spread cherry filling evenly, leaving a small border.
  • Spread whipped cream over the cherry filling, then re-roll the cake tightly.
  • Chill for at least 1 hour before serving.

Serving

  • Dust with powdered sugar and garnish with grated chocolate before serving.

Notes

Store leftover slices in an airtight container in the refrigerator for 3-5 days. For longer storage, freeze before adding whipped cream and cherry filling.
