Ingredients
  

For the crust

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted

For the cheesecake filling

  • 1 cup sugar
  • 3 packages cream cheese, softened (8 oz each) Ensure cream cheese is softened for smooth texture.
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup chocolate chips Feel free to use dark or white chocolate chips.
  • 1 cup caramel sauce Store-bought or homemade.

Preparation

  • Preheat the oven to 325°F (160°C).
  • In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan.

Making the filling

  • In a large mixing bowl, beat the cream cheese and sugar until smooth.
  • Add vanilla and eggs, mixing until just combined.
  • Stir in chocolate chips.

Baking

  • Pour the cheesecake batter over the crust.
  • Bake for 55-60 minutes or until set.
  • Allow to cool, then refrigerate for at least 4 hours.
  • Before serving, drizzle with caramel sauce.

Notes

Cover tightly with plastic wrap or place in an airtight container to store in the refrigerator for up to 5 days. Can be frozen for up to 2 months; thaw in the fridge overnight before serving.
