Ingredients
  

Crust

  • 1.5 cups graham cracker crumbs
  • 0.25 cups sugar
  • 0.5 cups unsalted butter, melted

Filling

  • 24 ounces cream cheese, softened 3 packages of 8 ounces each
  • 1 cups sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cups sour cream
  • 0.5 cups brewed coffee, cooled
  • 1 cups chocolate chips
  • 1 cups caramel sauce

Instructions
 

Preparation

  • Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
  • In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined, then press the mixture into the bottom of the prepared pan.

Filling

  • In a large mixing bowl, beat together cream cheese and sugar until smooth.
  • Add eggs one at a time, mixing well after each addition.
  • Stir in vanilla extract, sour cream, and brewed coffee.
  • Fold in chocolate chips gently.
  • Pour the cream cheese mixture over the crust in the springform pan.

Baking

  • Bake for 50-60 minutes or until set and slightly jiggly in the center.
  • Remove from oven and let cool completely.
  • Once cooled, drizzle with caramel sauce before serving.

Serving

  • Slice the cheesecake into wedges and serve it chilled with a dollop of whipped cream on top.

Notes

Make sure your cream cheese is softened to room temperature for a smoother mix. For best results, use freshly brewed coffee for a richer flavor. Drizzle warm caramel sauce on the cheesecake for a beautiful presentation.
