Ingredients
  

For the crust

  • 1 cup graham cracker crumbs
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted Make sure the butter is melted but not hot.

For the filling

  • 1 cup dark chocolate chips For a richer flavor, use dark chocolate with a higher cocoa percentage.
  • 1 cup raspberries (fresh or frozen) Use fresh raspberries when in season for the best flavor. If using frozen, do not thaw them beforehand.
  • 2 pieces eggs
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Grease an 8x8 inch baking dish.
  • In a bowl, combine graham cracker crumbs, cocoa powder, sugar, and melted butter. Press the mixture into the bottom of the prepared dish to form the crust.
  • In a saucepan, melt the dark chocolate chips over low heat. Once melted, let it cool slightly.
  • In another bowl, whisk together the eggs, heavy cream, vanilla extract, and salt. Gradually mix in the melted chocolate until well combined.

Baking

  • Pour the chocolate mixture over the crust, then evenly distribute the raspberries on top.
  • Bake for 25-30 minutes, or until the filling is set.

Cooling

  • Allow to cool completely before cutting into bars.

Notes

Serve these pie bars chilled or at room temperature. They can be enjoyed on their own, or paired with a dollop of whipped cream or a scoop of vanilla ice cream on the side. Store the pie bars in an airtight container in the refrigerator for 4-5 days, or freeze them for up to 2 months.
