Ingredients
  

For the crust

  • 1.5 cups graham cracker crumbs
  • 0.25 cups sugar
  • 0.5 cups unsalted butter, melted

For the filling

  • 2 cups cream cheese, softened Ensure cream cheese is softened to avoid lumps.
  • 1 cups sugar
  • 3 pieces eggs Add one at a time, mixing well after each.
  • 1 cups sour cream
  • 1 teaspoon vanilla extract
  • 0.25 cups brewed coffee
  • 0.5 cups chocolate chips Stir in until evenly distributed.
  • 1 cups caramel sauce Drizzle on top before serving.

Preparation

  • Preheat your oven to 325°F (163°C).
  • In a bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined.
  • Press this mixture into the bottom of a 9-inch springform pan.

Mixing the batter

  • In a large mixing bowl, beat the cream cheese and 1 cup sugar until smooth.
  • Add eggs, one at a time, mixing well after each addition.
  • Mix in sour cream, vanilla extract, and brewed coffee.
  • Stir in chocolate chips until evenly distributed.

Baking

  • Pour the cream cheese mixture over the crust in the springform pan.
  • Bake for 55-60 minutes or until set.
  • Remove from the oven and let cool.
  • Drizzle with caramel sauce and chill in the refrigerator for at least 4 hours or overnight before serving.

Notes

Store covered in the refrigerator for up to a week. Individual slices can be frozen and thawed overnight in the refrigerator. Consider adding extra caramel sauce or chocolate shavings when serving.
