Cookie Base

  • 1 cup unsalted butter, softened Make sure the butter is at room temperature for easy mixing.
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries Use fresh blueberries for the best flavor.
  • Zest of 1 lemon

Creamy Lemon Filling

  • 1 cup powdered sugar
  • 2 tablespoons lemon juice Adjust the amount of lemon juice for tartness to taste.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In a separate bowl, combine flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  • Gently fold in the blueberries and lemon zest.
  • Drop tablespoonfuls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.

Baking

  • Bake for 12-15 minutes until golden around the edges.
  • Allow cookies to cool completely.

Filling

  • For the filling, mix powdered sugar with lemon juice until smooth.
  • Spread the filling on the bottom of one cookie and top with another cookie to form a sandwich.

Notes

These cookies are best served at room temperature and pair nicely with tea or coffee. Feel free to sprinkle some extra powdered sugar on top for a pretty appearance. Store in an airtight container at room temperature for up to a week.
